Rustic Turkey Thighs

Ingredients
- 4 ea turkey thighs, skin on
- 28 oz can peeled roma tomatoes, large chop
- 4 ea carrots, medium chop
- 2 ea leeks, white and light green parts, medium chop
- 1 T dried oregano
- 1 T dried basil
Instructions
- Season and brown the thighs in an oven-proof skillet.
- Add the remaining ingredients, season to taste, and roast at 375 until the internal temperature of the thighs is 170.
- Plate and serve.
